In the elegant space once home to award-winning restaurant The Test Kitchen, TTK Fledgelings was founded with a simple goal: to offer those with no access to formal chef’s or guest service training – but boundless passion and determination – the opportunity to carve out a career in the hospitality.
With a focus on in-service training, under the mentorship of restaurateur Luke Dale Roberts and Head Chef Nathan Clarke, our ‘Fledgelings’ learn the trade while working. Similarly, the front-of-house staff are coached to host guests by mentors who work alongside them. Each Fledgeling is employed full-time while receiving invaluable on-the-job training.
Our hope is for the Fledgelings to hone their skills at the coalface of a professional restaurant, whether it’s behind the pass or out on the floor. It’s a long process – a slow simmer, not a rapid boil – but by the end, we are proud to produce seasoned chefs and talented service staff.
